Veal Chops
Serves 6
Ingredients:
2 Cups of
fresh white bread crumbs
1 Cup flat-leaf parsley leaves
1 ˝ teaspoons finely minced garlic
Coarse salt and freshly ground pepper to taste
3 tablespoons balsamic vinegar
3 large egg whites/slightly beaten
6 Simply Grazin' organic Veal chops
3 tablespoons of canola oil
Water

Preheat
the oven to 375 degrees.

Combine
the bread crumbs, parsley, garlic, balsamic vinegar and salt
and pepper to taste in the bowl of a food processor fitted
with the metal blade. Process until the Parsley is very
finely chopped and well incorporated into the crumbs. Scrape
the mixture from the bowl onto a large plate.

Using a
pastry brush, lightly coat the chops with the beaten egg
whites. Coat the chops on both sides with the bread crumb
mixture.

Heat
the oil in a large, non-stick sauté pan over medium-high
heat. Add the chops and sear for 5 minutes (or until nicely
browned) on one side. Turn and sear for 3 minutes on the
other side. Add a few Tablespoons of water to a pan and
place chops, in a single layer, in a pre-heated oven and
cook for about 35-40 minutes, depending on the thickness of
the chop. Remove from oven and let rest for 10 minutes.
Serve with your favorite vegetable.
