Veal Chops

 Serves 6

 Ingredients:

 2 Cups of fresh white bread crumbs
 1 Cup flat-leaf parsley leaves
 1 ˝ teaspoons finely minced garlic
 Coarse salt and freshly ground pepper to taste
 3 tablespoons balsamic vinegar
 3 large egg whites/slightly beaten
 6 Simply Grazin' organic Veal chops
 3 tablespoons of canola oil
 Water

  1.  Preheat the oven to 375 degrees.

  2. Combine the bread crumbs, parsley, garlic, balsamic vinegar and salt and pepper to taste in the bowl of a food processor fitted with the metal blade. Process until the Parsley is very finely chopped and well incorporated into the crumbs. Scrape the mixture from the bowl onto a large plate.

  3. Using a pastry brush, lightly coat the chops with the beaten egg whites. Coat the chops on both sides with the bread crumb mixture.

  4. Heat the oil in a large, non-stick sauté pan over medium-high heat. Add the chops and sear for 5 minutes (or until nicely browned) on one side. Turn and sear for 3 minutes on the other side. Add a few Tablespoons of water to a pan and place chops, in a single layer, in a pre-heated oven and cook for about 35-40 minutes, depending on the thickness of the chop. Remove from oven and let rest for 10 minutes. Serve with your favorite vegetable.
