Ribs & Spicy Barbecue Sauce
Pork Chops
2 1/2-3 lb. pork tenderloin
Marinade:
1/4 c. soy sauce
1/4 c. bourbon
2 tbsp. brown sugar
Sauce:
1/3 c. sour cream
1/3 c. mayonnaise
1 tbsp. dry mustard
1 tbsp. chopped scallions
1 1/2 tsp. vinegar
Salt
Marinate meat several hours at room temperature. Turn
occasionally.
Grill on barbeque grill for about 1/2 hour or bake in 325 degree
oven (1 hour). Baste frequently with marinade.
Carve on diagonal and serve with the Mustard Sauce.

Tenderloin with Mustard Sauce
Serves 6
Ingredients:
2 Cups
of fresh white bread crumbs 1 Cup flat-leaf parsley leaves 1 ½ teaspoons finely minced garlic Coarse salt and freshly ground pepper to taste 3 tablespoons balsamic vinegar 3 large egg whites/slightly beaten 6 Simply Grazin' organic Pork Chops 3 tablespoons of canola oil

Preheat the oven to 350 degrees. Combine the bread crumbs, parsley, garlic,
balsamic vinegar and salt and pepper to taste in the bowl of a food
processor fitted with the metal blade. Process until the Parsley is very
finely chopped and well incorporated into the crumbs. Scrape the mixture
from the bowl onto a large plate.

Using a pastry
brush, lightly coat the chops with the beaten egg whites. Coat the chops on
both sides with the bread crumb mixture.

Heat the
oil in a large, non-stick sauté pan over medium-high heat. Add the chops and
sear for 5 minutes (or until nicely browned) on one side. Turn and sear for
3 minutes on the other side. Add a few Tablespoons of water to a pan and
place chops, in a single layer, in a pre-heated oven and cook for about
40-45 minutes, depending on the thickness of the chop. Remove from oven and
let rest for 10 minutes. Serve with your favorite vegetable.

Ingredients:
2 Tbsp Oil
1 medium onion, diced
1 8-ounce can tomato sauce
½ cp packed brown sugar
¼ cup white vinegar
1 Tbsp Worcestershire sauce
4 tsp Chili Powder (Optional for Spicy)
2 tsp salt
¼ tsp dry mustard

In 1 quart
saucepan over medium heat, in hot oil, cook onion until
tender, about 5 minutes. Stir occasionally.

Add remaining
ingredients; heat to boiling, stirring constantly. Use to
baste spareribs or country ribs during grilling, OR coat
ribs and bake.
